Makes enough for 10 guests

Ingredients for the Citrus Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar

Ingredients for the Cocktail (makes 850ml, to serve 10)

400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, for finishing

Instructions

To prepare the Cordial: Put all the ingredients in a saucepan, heat until it reaches a simmer, agitating so the sugar melts. After that, take off the stove allowing it to cool entirely. Pour into a sterilised bottle, seal and refrigerate it chilled, it can be stored for up to four weeks.

For the Cocktail Base: Pour all the spirits and syrup into one sizeable container, let it rest for an hour, then pass it through , ideally through muslin, to ensure it's perfectly clear.

When ready to serve: Pour 85ml from the batch mix into your stirring glass packed with ice, gently stirring carefully for one minute until cold. Filter into a frosted cocktail glass or equivalent, decorate with a few cranberries adding the final touch by giving it a brief mist of mandarin oil over the top.
